Torch Industries, one of Western Canada leading Field Caterers has immediate vacancies for First Cook's.

We are seeking candidates that demonstrate excellence in leadership and the mentoring of co-workers, ability to effectively manage budgets that lead to healthy profit margins, strong working knowledge of safety and hygiene practices, and a client based focused.

Job Description: The 1st Cook in a Large camp is there to support the Chef with the prep of the mains and may provide direction to kitchen support staff. Candidates will be responsible for meal preparation under direction of the Chef. Food safe certification is required complemented by previous experience in camps or large banquet venues. Journeyman or Red Seal Certification is considered an asset.

Job Duties:

  • Daily participation in site safety requirements and meetings
  • Maintain personal hygiene & uniform cleanliness and requirements throughout shift as per standards
  • Daily meet with Chef to discuss meal preparation, production strategy and review assigned duties/workloads of kitchen
  • Clean and cut all meats, fish and poultry.
  • Preparation of all proteins required for daily production requirements
  • Oversee, participate in and be responsible for the handling, preparation, production and timely service of all meals in accordance with the methods and standards approved by the Chef and as per HACCP guidelines.
  • Supervise all staff involved in the preparation and serving of meals or as directed by the Chef.
  • Prepare all soups and sauces for daily meal service.
  • Defrost stock for upcoming meals according to approved to HACCP methods and safety procedures.
  • Unload, store and rotate stock according to HACCP and company approved methods.
  • Store and use leftover foods according to HACCP and company approved methods.
  • Ensure kitchen and work areas are clean and sanitized at all times.
  • Ensure that food spoilage and waste are kept to a minimum.
  • Ensure that prepared and stored foods are kept at appropriate temperatures
  • Supervise production and the loading and organization of the rig box
  • Assisting with unloading/loading of weekly grocery truck deliveries
  • Assist with serving of hot food items at meal times whenever required
  • Assisting with set up/tear down of camp
  • Assist with weekly/monthly inventories as directed/required
  • Wear required uniform and PPE: approved kitchen shirt and pants, slip resistant footwear (listed as non-slip or slip & oil resistant on shoe), hair net &/or headwear (beanie)
  • Any other duties as assigned by site supervisor

Education and Experience:

  • Journeyman Certification or equivalent designation and or related experience greater than 5 years
  • High School diploma or equivalent
  • Literate in the English language with reading and writing competency
  • Proficient with computer awareness & use
  • Remote Camp experience is an asset & preferred
  • Awareness & ability to operate all industrial kitchen equipment (incl. grills, ovens, fryers, mixers, etc.)
